For those of you Houston locals, don't get too excited. I am not announcing the grand opening of the newest location. However, our family got to eat a close second on Saturday night. This recipe was fantastic! (I have tried others, which were good but not as close and not nearly as complete.) We split the work with friends, so the recipe and all its parts were manageable. Today I had some leftovers and knew I just had to post, because I am such a Cafe Rio junkie and totally was in heaven both Saturday and today!
My only suggestion if you try to re-create, search for a homemade tortilla recipe, because ours were a little on the thin side. But other than that it was perfect. Now, I'll never get homesick again.

Yeah, I know Cafe Rio withdrawals will be one of the hardest things I have to deal with when I move. Good to know there's some recipes out there to try. I'm due July 29th, so we find out if its a boy or a girl on March 12th. Bret's hoping its a boy, so we'll see :)
That's funny because Percy tried to recreate the salad dressing last Sunday. It didn't turn out as well as it did the first time he did it, but it was still good.
so jealous.
